Tasty Tuesday - Sugary Sweet Cinnamon Pull-Apart Bread

Sugary Sweet Cinnamon Pull-Apart Bread



Ingredients:


- For the dough
  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 2 1/4 teaspoons dry yeast
  • 1/2 teaspoon salt
  • 2 oz unsalted butter
  • 1/3 cup whole milk
  • 1/4 cup water
  • 2 large eggs
  • 1 teaspoon vanilla extract

- For the filling
  • 1 cup sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg
  • 2 oz butter, melted until brown


Directions:



  1. In a mixing bowl whisk together 2 cups of flour, sugar, yeast and salt and set aside
  2. Whisk together eggs and set aside
  3. In a saucepan melt together milk and butter until butter has just melted. Remove from heat and add water and vanilla extract
  4. After a minute pour the milk mixture into the dry ingredients and mix with a wooden spatula. Add the eggs and keep stiring until the eggs are incorporated into the batter. That will take awhile, just keep stirring until the eggs don't feel soupy and they both come together
  5. Add the remaining 1 cup flour and stir another 3-4 min (the mixture will look sticky)
  6. Put the dough in a large greased bowl, cover with plastic wrapand a towel. Place it in a warm space and wait until doubled in size (for like 1 hour)
  7. Whisk together the sugar, cinnamon and nutmeg
  8. Melt 2 oz of butter until browned
  9. Grease and flour 9x5x3 inch loaf pan
  10. Deflate the dough and knead about half a cup flour into the dough. Cover with the towel and let it rest for 3-4 min
  11. On a lightly floured surface roll out the dough. It should be 12 inches tall and about 20 long. Use a pastry brush to spread melted butter across the dough. Sprinkle with all of the sugar and cinnamon mixture.
  12. Slice the dough vertically into 6 equal sized strips and stack them on top of one another. Slice the stack into 6 equal slices again.
  13. Layer the dough squares in the loaf pan like a flip-book. Cover with towel and leave it for about 30 min in a warm place
  14. Place a rack in the middle of the oven and preheat to 350F. Bake for about 35 min until the top is very golden-brown.
  15. Remove from oven and leave it to rest for at least 30 min. Run a knife around the edges of the pan to loosen the bread and invet on a clean board. Place a plate on top of the upside-down loaf and carefully flip it over.
