Hearty Lentil and Potato Stew

Hearty Lentil and Potato Stew

Ingredients:

1 lb brown lentils
4 potatoes - cubed
2-3 carrots - chopped
1 onion - chopped
5 cloves garlic - roughly chopped
3 tbsp tomato puree
vegetable oil
salt
ground black pepper
paprika
2 teaspoons savory

Directions:
  1. In a large saucepan, put the lentils to boil with 5-6 cups of water (depending on how thick you want it at the end). Add 1/2 teaspoon salt and a little oil. Once it starts boiling add the peeled and cubed potatoes to it.
  2. Heat oil in a skillet and saute chopped onion and carrots for about 8-10 min. Then add the tomato puree and the garlic. Mix everything together.
  3. Pour the sauteed veggies into the lentils and potatoes. Add all spices - salt, black pepper, paprika and savory (everything to taste). Mix all together and leave on low until ready (about 15 min).
  4. Enjoy!

  6. I see I'm not the only one inspired by the change in the weather to make a pot of lentils. I even eat the leftovers with some rice for breakfast. :)

  8. I always thought lentils took a long time to cook. Knowing they can be so quick, I'll have to start experimenting with them. Thanks!

  10. I pinned this so I will remember to make it this fall or winter. It is so hot here in TX that I will not be making and serving any type of soup or stew right now. I do make a lot of them in the fall and winter though when it cools down. Thanks for the recipe.
