Spicy Chicken Mexican Casserole



Ingredients:

  • 1/4 cup olive oil
  • 1 1/2 pounds cubed chicken breast meat
  • 2 x 15 oz cans kidney beans
  • 2 x 8 oz cans sweet corn
  • 1/2 salsa
  • water as needed
  • 2 cups shredded cheese of your choice (I used cheddar)
  • 3 cups crushed plain tortilla chips


For the taco seasoning mix:

  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Light Chicken-Zucchini Alfredo

Light Chicken-Zucchini Alfredo


Ingredients: 

  • 16 oz thin skinless, boneless chicken breasts
  • 12 oz fettuccine
  • 2 cloves garlic
  • 2 zucchini, thinly sliced into half-moons
  • 1 tablespoon flour
  • 1 cup cold milk
  • 1/2 cup evaporated nonfat milk
  • 1 cup freshly grated parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons olive oil
  • ground pepper
  • salt


Directions:
  1. Bring a large pot of salted water to a boil. Heat 1 tablespoon olive oil in a nonstick skillet over medium heat. Add 1 clove garlic and cook 30-40 seconds. Add the zucchini, cover and cook until tender, stirring. Transfer to a bowl.

Tasty Tuesday - Homemade Cocoa Banana Cream Roll

Homemade Cocoa Banana Cream Roll


Ingredients:

For the cake part:

  • 6 eggs
  • 1 cup sugar
  • 6 table spoons oil
  • 6 table spoons soda
  • 1 cup flour
  • 1 vanilla extract

For the cream:

  • 4 cups milk (34 fl oz)
  • 3 1/2 oz sugar
  • 1 vanilla extract
  • 8 table spoons flour
  • 2 eggs (beaten)
  • 2 table spoons butter
  • walnuts

Others:
  1. 2 bananas
  2. cocoa


Directions:

Start with the cream so you can let it cool down.
  1. Pour the milk and the sugar in a saucepan. Bring it to boil.
  2. Slowly add the flour to a little warm water and mix very good until it's like a thick-ish mush. 
  3. Add to the milk and stir.
  4. Add the beaten eggs, the vanilla and the butter. Keep stirring until everything is mixed good.
  5. Take off stove and let it cool down.

Tasty Tuesday - Homemade Pizza Night



What we put on our pizza:

- tomato sauce (as much as you like, just don't soak the dough)
- mushrooms (we love mushrooms on pizza)
- ham (or any other meat you would like)
- red pepper (red, because it's nice and sweet)
- top it with shredded mozzarella 
- some pickles (sounds strange but it's good!)
- basil

Throw it in a preheated oven for about 20-25 min and you have delicious, hot, crunchy homemade pizza.

Tasty Tuesday - Quick & Easy Cashew Chicken

QUICK & EASY CASHEW CHICKEN


Ingredients:


  • 2 pound chicken breasts (cut into strips)
  • 1 mango (cut into the same strips as chicken)
  • 3 1/2 fl oz milk 
  • 4 table spoons olive oil
  • 2-3 table spoon curry powder
  • 3 1/2 oz cashew
  • 2 oz raisins



Directions:

  1. Heat oil and fry chicken until cooked. Remove from heat.
  2. Add the mango strips and mix everything. Put back on heat.
  3. Add the cashew and raisins and fry for not more than 4 more min.
  4. Pour the milk and stir. Season with the curry and leave for a couple more minutes.
  5. You can serve it with white rice and fresh tomatoes on the side.

Tasty Tuesday - Meatballs in Tomato Sauce

Meatballs in Tomato Sauce

These are truly the most delicious meatballs I have ever made, full of flavor!  My family loved them.  They are perfect with pasta or would even make a tasty meatball sandwich.  Enjoy!




Ingredients:

For the meatballs:
  • 1,6 lb good quality ground meat
  • 1 onion, peeled and very finely chopped
  • 1 garlic clove, peeled and finely chopped
  • 2 oz white breadcrumbs
  • 2 oz cheddar cheese, grated
  • 3 tbsp chopped parsley
  • salt and pepper
  • 1 large egg, lightly beaten
  • olive oil 

For the tomato sauce:
  • 1 1/2 onion, peeled and very finely chopped
  • 1 garlic clove, peeled and finely chopped
  • 6 fl oz white wine
  • 2 x 14 oz cans chopped tomatoes
  • 5 fl oz water 
  • 1-2 tsp sugar
  • olive oil



Directions:

  1. Mix the meat, onion, garlic, breadcrumbs, cheese and chopped parsley together in a bowl until combined. Season well and add the beaten egg to bind, mixing with your hands. 
  2. With damp hands, shape the mixture into about 16 meatballs, trying not to press them too tightly. Place on a large plate, cover with clingfilm and chill for at least 30 minutes.
  3. To make the tomato sauce, heat the olive oil in a frying pan, add the onion and garlic and fry gently until lightly golden. Increase the heat slightly and pour in the wine. Let it bubble until reduced by half, then stir in the tomatoes, water and sugar. Season with salt and pepper. Simmer for 10-15 minutes, until the tomatoes are soft, then remove from the heat.
  4. To cook the meatballs, heat the olive oil in a large, wide pan. Add the chilled meatballs and fry, turning frequently, until browned all over.
  5. Pour the tomato sauce over them and simmer for a further 10-15 minutes until the meatballs are cooked through.

Tasty Tuesday - Mexican Style Zucchini Casserole

Mexican Style Zucchini Casserole

This Mexican style zucchini recipe is sure to hit the spot!  Sometimes you just need to get a little creative in the kitchen, and casseroles are the perfect way to do that.  You can make it more or less spicy, depending on your taste buds.



Ingredients:

  • 2 tablespoons olive oil
  • 1 pound zucchini, cubed
  • 2 onions, chopped
  • 1 teaspoon garlic salt
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper
  • 1 cup cooked long grain rice
  • 1 1/2 - 2 cups cooked beans
  • 2 1/2 cups salsa
  • 2 cups shredded cheese


Directions:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Heat the oil in a large skillet over medium-high heat. Add zucchini and onions; cook and stir until tender, about 10 minutes. Season with garlic salt, paprika, oregano and cayenne pepper, and continue cooking and stirring until fragrant. Mix in the rice, beans and salsa and cook just until heated through. Mix in 1 cup of Cheddar cheese until well blended. Transfer to a 9x13 inch baking dish and top with remaining Cheddar cheese. Cover the dish with a lid or aluminum foil.
  3.  Bake for 20 minutes in the preheated oven, or until cheese is melted and bubbly.
  4. Enjoy!  And there you have it, zucchini casserole, Mexican style.

Very Easy Cheesy Oven Baked "Giuveche"




Ingredients:



  • feta cheese
  • mozzarella cheese (shredded)
  • blue cheese (slices)
  • ham
  • onion (chopped)
  • mushrooms (whole, not very big)
  • heavy cream
  • butter
  • eggs
  • tomatoes (on slices)
  • corn
The amount are as desired. Make sure the cheeses are at least 1/2 inch layers.

Directions:

  1. In a single serving crock layer feta, mozzarella, blue cheese, ham, onion, mushrooms. Pour cream on top and put a spoonful of butter.
  2. Put corn and tomatoes, and on top crack an egg. Cover the crock with the lid.
  3. Preheat oven to 375F, and bake for about 40 min.
