Tasty Tuesday - Mexican Style Zucchini Casserole

Mexican Style Zucchini Casserole

This Mexican style zucchini recipe is sure to hit the spot!  Sometimes you just need to get a little creative in the kitchen, and casseroles are the perfect way to do that.  You can make it more or less spicy, depending on your taste buds.



Ingredients:

  • 2 tablespoons olive oil
  • 1 pound zucchini, cubed
  • 2 onions, chopped
  • 1 teaspoon garlic salt
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper
  • 1 cup cooked long grain rice
  • 1 1/2 - 2 cups cooked beans
  • 2 1/2 cups salsa
  • 2 cups shredded cheese


Directions:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Heat the oil in a large skillet over medium-high heat. Add zucchini and onions; cook and stir until tender, about 10 minutes. Season with garlic salt, paprika, oregano and cayenne pepper, and continue cooking and stirring until fragrant. Mix in the rice, beans and salsa and cook just until heated through. Mix in 1 cup of Cheddar cheese until well blended. Transfer to a 9x13 inch baking dish and top with remaining Cheddar cheese. Cover the dish with a lid or aluminum foil.
  3.  Bake for 20 minutes in the preheated oven, or until cheese is melted and bubbly.
  4. Enjoy!  And there you have it, zucchini casserole, Mexican style.

  2. This might actually make me try zucchini again...not a fan but all the other ingredients make this sound wonderful.  My parents would love this..I will pass along the recipe!

  9. White kidney beans, that's what I used. I'm not sure if you could substitute it with something, but if you think of it you should let me know:)
