4 potatoes - cubed
2-3 carrots - chopped
1 onion - chopped
5 cloves garlic - roughly chopped
3 tbsp tomato puree
vegetable oil
salt

2 teaspoons savory

Easy Oven Baked Peas & Potatoes

Easy Peas & Potatoes

A hearty and filling dish that is not short on flavor!  Perfect as a meatless meal, and a great way to get your serving of vegetables.

Ingredients:

2 -15 oz cans sweet peas
2 large potatoes, chopped
2 onions, chopped
2 carrots, diced
2 green bell pepper, diced
2-3 cloves garlic, diced
2-3 teaspoons tomato paste
3 tablespoons vegetable oil
1 teaspoon paprika
1 teaspoon cumin
salt to taste
whole black pepper to taste

Tasty Tuesday - Spicy Chicken Mexican Casserole

Spicy Chicken Mexican Casserole



Ingredients:

  • 1/4 cup olive oil
  • 1 1/2 pounds cubed chicken breast meat
  • 2 x 15 oz cans kidney beans
  • 2 x 8 oz cans sweet corn
  • 1/2 salsa
  • water as needed
  • 2 cups shredded cheese of your choice (I used cheddar)
  • 3 cups crushed plain tortilla chips


For the taco seasoning mix:

  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Light Chicken-Zucchini Alfredo

Light Chicken-Zucchini Alfredo


Ingredients: 

  • 16 oz thin skinless, boneless chicken breasts
  • 12 oz fettuccine
  • 2 cloves garlic
  • 2 zucchini, thinly sliced into half-moons
  • 1 tablespoon flour
  • 1 cup cold milk
  • 1/2 cup evaporated nonfat milk
  • 1 cup freshly grated parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons olive oil
  • ground pepper
  • salt


Directions:
  1. Bring a large pot of salted water to a boil. Heat 1 tablespoon olive oil in a nonstick skillet over medium heat. Add 1 clove garlic and cook 30-40 seconds. Add the zucchini, cover and cook until tender, stirring. Transfer to a bowl.

Homemade Cocoa Banana Cream Roll


Ingredients:

For the cake part:

  • 6 eggs
  • 1 cup sugar
  • 6 table spoons oil
  • 6 table spoons soda
  • 1 cup flour
  • 1 vanilla extract

For the cream:

  • 4 cups milk (34 fl oz)
  • 3 1/2 oz sugar
  • 1 vanilla extract
  • 8 table spoons flour
  • 2 eggs (beaten)
  • 2 table spoons butter
  • walnuts

Others:
  1. 2 bananas
  2. cocoa


Directions:

Start with the cream so you can let it cool down.
  1. Pour the milk and the sugar in a saucepan. Bring it to boil.
  2. Slowly add the flour to a little warm water and mix very good until it's like a thick-ish mush. 
  3. Add to the milk and stir.
  4. Add the beaten eggs, the vanilla and the butter. Keep stirring until everything is mixed good.
  5. Take off stove and let it cool down.

Tasty Tuesday - Homemade Pizza Night



What we put on our pizza:

- tomato sauce (as much as you like, just don't soak the dough)
- mushrooms (we love mushrooms on pizza)
- ham (or any other meat you would like)
- red pepper (red, because it's nice and sweet)
- top it with shredded mozzarella 
- some pickles (sounds strange but it's good!)
- basil

Throw it in a preheated oven for about 20-25 min and you have delicious, hot, crunchy homemade pizza.

Tasty Tuesday - Quick & Easy Cashew Chicken

QUICK & EASY CASHEW CHICKEN


Ingredients:


  • 2 pound chicken breasts (cut into strips)
  • 1 mango (cut into the same strips as chicken)
  • 3 1/2 fl oz milk 
  • 4 table spoons olive oil
  • 2-3 table spoon curry powder
  • 3 1/2 oz cashew
  • 2 oz raisins



Directions:

  1. Heat oil and fry chicken until cooked. Remove from heat.
  2. Add the mango strips and mix everything. Put back on heat.
  3. Add the cashew and raisins and fry for not more than 4 more min.
  4. Pour the milk and stir. Season with the curry and leave for a couple more minutes.
  5. You can serve it with white rice and fresh tomatoes on the side.

Tasty Tuesday - Meatballs in Tomato Sauce

Meatballs in Tomato Sauce

These are truly the most delicious meatballs I have ever made, full of flavor!  My family loved them.  They are perfect with pasta or would even make a tasty meatball sandwich.  Enjoy!




Ingredients:

For the meatballs:
  • 1,6 lb good quality ground meat
  • 1 onion, peeled and very finely chopped
  • 1 garlic clove, peeled and finely chopped
  • 2 oz white breadcrumbs
  • 2 oz cheddar cheese, grated
  • 3 tbsp chopped parsley
  • salt and pepper
  • 1 large egg, lightly beaten
  • olive oil 

For the tomato sauce:
  • 1 1/2 onion, peeled and very finely chopped
  • 1 garlic clove, peeled and finely chopped
  • 6 fl oz white wine
  • 2 x 14 oz cans chopped tomatoes
  • 5 fl oz water 
  • 1-2 tsp sugar
  • olive oil



Directions:

  1. Mix the meat, onion, garlic, breadcrumbs, cheese and chopped parsley together in a bowl until combined. Season well and add the beaten egg to bind, mixing with your hands. 
  2. With damp hands, shape the mixture into about 16 meatballs, trying not to press them too tightly. Place on a large plate, cover with clingfilm and chill for at least 30 minutes.
  3. To make the tomato sauce, heat the olive oil in a frying pan, add the onion and garlic and fry gently until lightly golden. Increase the heat slightly and pour in the wine. Let it bubble until reduced by half, then stir in the tomatoes, water and sugar. Season with salt and pepper. Simmer for 10-15 minutes, until the tomatoes are soft, then remove from the heat.
  4. To cook the meatballs, heat the olive oil in a large, wide pan. Add the chilled meatballs and fry, turning frequently, until browned all over.
  5. Pour the tomato sauce over them and simmer for a further 10-15 minutes until the meatballs are cooked through.

Tasty Tuesday - Mexican Style Zucchini Casserole

Mexican Style Zucchini Casserole

This Mexican style zucchini recipe is sure to hit the spot!  Sometimes you just need to get a little creative in the kitchen, and casseroles are the perfect way to do that.  You can make it more or less spicy, depending on your taste buds.



Ingredients:

  • 2 tablespoons olive oil
  • 1 pound zucchini, cubed
  • 2 onions, chopped
  • 1 teaspoon garlic salt
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper
  • 1 cup cooked long grain rice
  • 1 1/2 - 2 cups cooked beans
  • 2 1/2 cups salsa
  • 2 cups shredded cheese


Directions:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Heat the oil in a large skillet over medium-high heat. Add zucchini and onions; cook and stir until tender, about 10 minutes. Season with garlic salt, paprika, oregano and cayenne pepper, and continue cooking and stirring until fragrant. Mix in the rice, beans and salsa and cook just until heated through. Mix in 1 cup of Cheddar cheese until well blended. Transfer to a 9x13 inch baking dish and top with remaining Cheddar cheese. Cover the dish with a lid or aluminum foil.
  3.  Bake for 20 minutes in the preheated oven, or until cheese is melted and bubbly.
  4. Enjoy!  And there you have it, zucchini casserole, Mexican style.

Very Easy Cheesy Oven Baked "Giuveche"




Ingredients:



  • feta cheese
  • mozzarella cheese (shredded)
  • blue cheese (slices)
  • ham
  • onion (chopped)
  • mushrooms (whole, not very big)
  • heavy cream
  • butter
  • eggs
  • tomatoes (on slices)
  • corn
The amount are as desired. Make sure the cheeses are at least 1/2 inch layers.

Directions:

  1. In a single serving crock layer feta, mozzarella, blue cheese, ham, onion, mushrooms. Pour cream on top and put a spoonful of butter.
  2. Put corn and tomatoes, and on top crack an egg. Cover the crock with the lid.
  3. Preheat oven to 375F, and bake for about 40 min.

Tasty Tuesday - Chicken Chili Stew

Ingredients:


1 3/4 pounds diced chicken breast meat
2 green bell pepper, diced
2 red bell peppers, diced
1 onion, diced
1/2 cup frozen corn kernels
4 (15 ounce) cans kidney beans with liquid
2 (14 ounce) cans diced tomatoes
1 (15 ounce) can tomato paste
2 cups warm water
2 teaspoons chili powder
1 tablespoon dried parsley
1 teaspoon garlic powder
1/2 teaspoon ground cayenne pepper
1/2 teaspoom ground cumin


Directions:

  1. Coat a large pot with oil and place over medium-high heat.
  2. Stir in chicken, bell peppers and onion and cook until chicken is brown and peppers are tender.
  3. Stir in corn, beans, tomatoes, tomatoe paste and water.
  4. Season with chili powder, parsley, garlic powder, cayenne pepper and cumin. Reduce heat, cover and simmer 40 min.

Tasty Tuesday - Cheesy Ham & Potatoes Casserole

Cheesy Ham & Potatoes Casserole

Ingredients:

  • 2 - 2 1/2 pounds potatoes (peeled and cut on cubes)
  • 3 oz ham
  • 2 oz mushrooms
  • 10 oz mozzarella cheese (shredded)
  • 1 medium red onion (sliced on rings)
  • 3 1/2 oz butter
  • 3 - 3 1/2 oz milk
  • salt & pepper to taste



Directions:

  1. Preheat oven to 390F
  2. Put the potatoes on the bottom of a 15 inch casserole dish and drop in spoonfuls of butter. Put the onion rings on top of the butter and the potatoes. 
  3. Put in the oven until butter melts and then pour the milk over it. Place back in the oven for 15 min.
  4. Take dish out of the oven and mix everything together. Bake for another 15 min (make sure it's not dry and it doesn't stick to the dish, if needen add butter & milk).
  5. Put mushrooms, ham, salt & pepper, mix everything together. Put back to bake for another 15 min.
  6. Put the cheese on top and return to oven until cheese is browned.
  7. Serve warm.

Tasty Tuesday - Chocolaty Walnut Chips

Chocolaty Walnut Chips



Ingredients:


  • 1 cup butter, softened
  • 1 1/2 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all purpose flour
  • 2/3 cup cocoa powder
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups chocolate chips
  • 1/2 cup walnuts




Directions:
  1. In a large bowl beat butter, sugar, eggs and vanilla until lightly fluffy. Combine the flour, cocoa, baking powder and salt. Stir into the butter mixture until well blended. Refrigerate for an hour.
  2. Mix in the chocolate chips and walnuts. Drop by rounded spoonfuls onto ungreased cooking sheet.
  3. Preheat oven to 350F (175C) and bake for about 10 min. Cool slightly on the cooking sheets before transfering them.

Tasty Tuesday - Lemon Chicken and Tomato Pasta

Lemon Chicken and Tomato Pasta




Ingredients:



  • 8 oz pasta
  • 1 tablespoon olive oil
  • 1 pound chicken breasts
  • 2 cloves garlic
  • 1 (8 oz) can diced tomatoes (undrained)
  • 8 oz tomato paste
  • lemon juice from half a lemon
  • 1/2 cup cream cheese
  • fresh or dry basil (I used dry)
  • black pepper



Directions:

  1. Cook pasta. Meanwhile, heat oil in a large nonstick skillet. Add chicken and garlic and cook until chicken is no longer pink. Remove from skillet and keep warm.
  2. Stir together tomatoes, tomato paste and lemon juice in the same skillet. Bring to boil and add the cream cheese. Stir until the cheese is completely melted and simmer for 2-3 minutes.
  3. Drain pasta and add it to the sauce in skillet and stir to coat. Stir in the chicken and the basil.

  • 1/3 cup whole milk
  • 1/4 cup water
  • 2 large eggs
  • 1 teaspoon vanilla extract

- For the filling
  • 1 cup sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg
  • 2 oz butter, melted until brown

Easy Cheesy Taco Casserole

Ingredients:
  • 1 pound lean ground beef
  • 2 cups salsa
  • 1 (16 ounce) can chili beans (or kidney beans will do), drained
  • 3 cups tortilla chips, crushed (if you like it crunchier put more)
  • 2 cups sour cream
  • 1/2 cup chopped green onion (or regular if you can't find green)
  • 2 chopped fresh tomatoes
  • 10 oz shredded Cheddar cheese

Tasty Tuesday - Beer Cookies

Beer Cookies

Ingredients:
  • 17 ounce/500 gr flour
  • 1 tablespoon baking soda
  • 1 cup sunflower oil
  • 1 cup beer
  • powder sugar 
  • vanilla powder

Directions:
  1. Combine flour, baking soda, oil and beer in a mixing bowl
  2. Mix together well to make a dough. Add more flour as needed (personally I added about 7 ounce/200 gr more)
  3. Keep kneading the dough as long as it takes until it is nice and smooth (you should know that it will always seem a little bit oily but don't over-do with the flower)
  4. Roll out the dough to 1/2 inch thickness
  5. Cut out the cookies with a small round cookie cutter or use a shot glass
  6. Place them in a baking dish (with no butter or wax paper) and bake them on 390F/200C until they are golden brownish on both sides.
  7. Mix the powder sugar and the vanilla powder in a big bowl, drop the ready cookies in while still warm and cover them with the sugar

Tasty Tuesday - Fried Cauliflower With Sauce

Fried Cauliflower With Sauce

Ingredients:


  • 1 head of cauliflower (cut into florets)
  • 4 table spoons flour 
  • 4 eggs
  • 4 oz mozzarela (shredded on very small pieces)
  • oil
  • salt


Sauce:

  • 1 yogurt (plain)
  • 2 cloves garlic (crushed)


Directions:

  1. Bring water to boil add a teaspoon of salt. Put the cauliflower florets  and return to boil. Boil for about 5 min.
  2. Coat the boiled pieces of cauliflower with flour, dip in egg and coat with some cheese.
  3. Preheat oil and fry them until golden-brown.
  4. For the sauce mix the yogurt and the crushed garlic.
  5. Serve warm and cover with the yogurt sauce.
  6. Enjoy!

Tasty Tuesday - Baked Potatoes With Ham and Sauce

Ingredients:

  • 2 pounds potato (cut in thick circles)
  • 1 pound ham (cut on slices, a little bit thinner than the potatoes, but still kind of thick)
  • 4 ounce butter
  • Mozzarella
  • Salt


For the Sauce:

  • 1 plain yogurt
  • 1-2 tablespoons mayo
  • 2-3 cloves garlic
  • Dill


Directions:
  1. Layer the potatoes then the meat then again potatoes - meet - potatoes. On top you should end with potatoes!
  2. Put heaping spoons of butter on top, cover and put in the oven for about 40 min on 360-400F (don’t put any water).
  3. While the dish is baking prepare your sauce, mixing all the ingredients together.
  4. A little before the dish is ready, take it out from the oven, cover with cheese and pour the sauce on top.
  5. Put back in the oven for another 10 min without the lid.
  6. Take out and serve. Enjoy!

Tasty Tuesday - Autumn Stuffed Peppers

Stuffed Peppers

Stuffing:
  • 8-10 Green Peppers
  • 1 ½ cups rice
  • 17 oz ground meat ( I use 50% pork and 50% beef)
  • 1 teaspoon savory
  • 1 onion (chopped)
  • 1 teaspoon paprika
  • 1 carrot (chopped)
  • 3-4 table spoons oil
  • 1 teaspoon salt
  • black pepper


Sauce:
  • 15 oz yogurt
  • 1 egg
  • 1 table spoon flour
  • salt
