Easy Cheesy Taco Casserole
Ingredients:
- 1 pound lean ground beef
- 2 cups salsa
- 1 (16 ounce) can chili beans (or kidney beans will do), drained
- 3 cups tortilla chips, crushed (if you like it crunchier put more)
- 2 cups sour cream
- 1/2 cup chopped green onion (or regular if you can't find green)
- 2 chopped fresh tomatoes
- 10 oz shredded Cheddar cheese

Directions:
- In a large skillet cook beef over medium-high heat, until no longer pink
- Stir in salsa, reduce heat and simmer for 20 minutes or until liquid is absorbed
- Stir in beans and heat through
- Butter baking dish and spread the chips and then layer the beef micture over it. Spread sour cream over the beef and then layer green onion and tomatoes. Top with the shredded cheddar cheese
- Preheat oven to 350F and bake for 30 min
Nice! Looks really yummy! This may sound dumb, but I thought it was hard to find cheddar cheese in Bulgaria. I don't eat much cheese, except for real cheddar and mozzarella (not the fresh stuff), and despise Feta, Sirene, etc. Good to know what it's available! I am definitely going to make this.

ReplyDeleteYeah, where I live cheddar is easy to find in almost every big store. Otherwise some cheeses are hard to find, I guess because they are not that popular here.
