Tasty Tuesday- Cheesy Oven Baked Penne

CHEESY OVEN BAKED PENNE WITH TOMATO & MUSHROOM

You will need:

800 gr/28 oz (two 14 oz cans) Italian diced tomato

1 package penne pasta

300 gr/10 oz fresh mozzarella cheese, shredded or sliced

250 gr/8 oz formaggio cheese, shredded

300 gr/10 oz package mushroom

1 onion diced

2 cloves garlic chopped

Olive oil

Butter

Salt, pepper, oregano and basil to taste

Preheat olive oil in a large pan and add the diced onion and garlic. Fry them for a couple of minutes and add the sliced mushrooms with half of the tomatoes. Stir everything and leave for another 2-3 minutes. Add the rest of the tomatoes, the oregano, basil, salt and pepper. Saute everything together for another 10-15 min on low heat while you cook your pasta (don’t overcook it because it’s going in the oven afterwords).

When the pasta is ready pour it in a baking dish and add some butter. Mix them together and add the tomato & mushroom sauce.  Cover with the shredded formaggio and layer fresh mozzarella slices on top.

Place in oven at 400 F/200 C for 15 about minutes to bake until cheese is melted.

PS: If you want it and like it more saucy, add one can of tomato puree.

Belogradchik Fortress & Rocks

The Belogradchik Fortress is an ancient fortress close to the northwestern Bulgarian town of Belogradchik and the town's primary cultural and historical tourist attraction, drawing, together with the Belogradchik Rocks, the main flow of tourists into the region. It is one of the best-preserved strongholds in Bulgaria and a cultural monument of national importance.

The initial fortress was constructed during the time when the region was part of the Roman Empire. The rock formations in the area served as a natural protection, as fortified walls were practically only built from the northwest and southeast, with the yard being surrounded by rocks up to 70 m (230 ft) high from the other sides.

Chesapeake City

Chesapeake City is a small charming town in Cecil County, Maryland, United States. The population is around 800 people. The town was originally named by Bohemian colonist Augustine Herman “The Village of Bohemia” (or Bohemia Manor), but the name was changed in 1839 when the Chesapeake and Delaware Canal was built. Today, the town contains numerous old homes from that era that have been converted in to bed and breakfasts, restaurants, and the local historical museum.
