Mexican Style Zucchini Casserole
This Mexican style zucchini recipe is sure to hit the spot! Sometimes you just need to get a little creative in the kitchen, and casseroles are the perfect way to do that. You can make it more or less spicy, depending on your taste buds.
This Mexican style zucchini recipe is sure to hit the spot! Sometimes you just need to get a little creative in the kitchen, and casseroles are the perfect way to do that. You can make it more or less spicy, depending on your taste buds.
Ingredients:
- 2 tablespoons olive oil
- 1 pound zucchini, cubed
- 2 onions, chopped
- 1 teaspoon garlic salt
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon cayenne pepper
- 1 cup cooked long grain rice
- 1 1/2 - 2 cups cooked beans
- 2 1/2 cups salsa
- 2 cups shredded cheese

Directions:
- Preheat the oven to 350 degrees F (175 degrees C).
- Heat the oil in a large skillet over medium-high heat. Add zucchini and onions; cook and stir until tender, about 10 minutes. Season with garlic salt, paprika, oregano and cayenne pepper, and continue cooking and stirring until fragrant. Mix in the rice, beans and salsa and cook just until heated through. Mix in 1 cup of Cheddar cheese until well blended. Transfer to a 9x13 inch baking dish and top with remaining Cheddar cheese. Cover the dish with a lid or aluminum foil.
- Bake for 20 minutes in the preheated oven, or until cheese is melted and bubbly.
- Enjoy! And there you have it, zucchini casserole, Mexican style.

Very Easy Cheesy Oven Baked "Giuveche"
Ingredients:
- feta cheese
- mozzarella cheese (shredded)
- blue cheese (slices)
- ham
- onion (chopped)
- mushrooms (whole, not very big)
- heavy cream
- butter
- eggs
- tomatoes (on slices)
- corn

The amount are as desired. Make sure the cheeses are at least 1/2 inch layers.
Directions:
- In a single serving crock layer feta, mozzarella, blue cheese, ham, onion, mushrooms. Pour cream on top and put a spoonful of butter.
- Put corn and tomatoes, and on top crack an egg. Cover the crock with the lid.
- Preheat oven to 375F, and bake for about 40 min.
